Directions: Put all the ingredients into a preserving pan or a wide based saucepan. Stir over a low heat until the sugar has dissolved.
Bring to the boil and simmer gently for 30-40 minutes until the mixture is thick and pulpy and most of the liquid has evaporated stirring occasionally. Spoon into sterilized jars and seal immediately. The relish will keep for several months stored in a cool dark place.
